I guess it depends. If "easiest to pit" means "get it up to its usual state of functioning," then the Mad Max car wouldn't need much. But if it's like actually going in for a full pit, KITT is better maintained and would need less work

The Mad Max V8 Interceptor is the strong contender in this match.  It would be a very quick pit stop to get it going again.

This thing survives all manner of hell and can be held together with bailing wire and chewing gum.

When Max is captured in Fury Road, they do this conversion:

Furthermore...

KITT is a very complicated machine requiring special engineering that also complains. I can just imagine KITT ordering the pit crew around and asking them to "be gentle".

No need to be gentle with the Interceptor. Just get it done and move on.

Pretty much this, one thing I remember about KITT is the fact that it interacted with anyone who touched it. I feel like it would be a drag to actually work on it.
