Amaterasu would probably have more to offer the Ewoks then Sobek. As a sun goddess I’m sure the Ewoks would appreciate her growing them berries and herbs to eat and they would respect her as a warrior from her stories of battling her brothers Tsukuyomi and Susanoo for the rights of her subjects. 

Sobek meanwhile would probably be too scary looking for them to accept.

Sobek is a protector of people and rivers (nature kinda). I think he fits more into whatever religion the Ewoks have.

I mean Amaterasu is a warrior and protector too. Also don’t you think Sobek’s appearance might frighten the Ewoks a little?

Just saying that the Ewoks might gravitate better towards the goddess that looks more like a human (the species they have good relations with) then the giant sharp toothed creature that looks like it would eat an Ewok for breakfast.
