I don't actually know if he can die. He casually mends bones and tosses his head around, and apparently in the game could be melted down by acid with no real effect on him. He's a scary dude, so I think takes his quite easily.

This discussion got my curious, and apparently in the game Jack can turn into a puddle of goo by stepping on a pool of acid and reform himself when he wants to. There's also apparently a game that acts as a sequel to the movie. I had no idea
